As restaurateurs in the heart of Zurich, we love good food, sustainable events, and our environment. That’s why sustainability isn’t a trend for us, but the basis of everything we do. We want you to enjoy your time with us with a clear conscience. Throughout Kaufleuten, we actively make sure to handle natural resources with care.
What we actually do
- Green energy:
We continuously reduce consumption for heating, lighting, and electrical equipment. Our operations run on 100% environmentally friendly ewz natural power from renewable sources. Certified.
- Energy efficiency:
We have a voluntary agreement with the Canton of Zurich to improve energy efficiency. Achievement of our targets is reviewed and confirmed annually by ewz.
- From the region, for the region:
Our kitchen cooks seasonally. We know our suppliers personally and source meat, vegetables, and fish primarily from Zurich and Switzerland. We consistently avoid air-freighted produce.
- Conscious purchasing:
This includes durable products, fair supply chains, eco-friendly cleaning products, and the shortest possible supply routes.
- Against food waste:
We calculate carefully, use products in their entirety, and work with partners to make sure valuable food doesn’t end up in the trash.
- Circular instead of disposable:
Our used cooking oil is recycled into biodiesel, and organic waste goes to the biogas plant.
- Recyclable materials:
Consistent waste separation and recycling of PET, aluminum, and waste paper.
- Resource efficiency:
Promoting digital ways of working to reduce printed materials.
- Responsibility in event operations:
For a club and event venue, it also matters how you encourage guests to travel by public transport, reduce printed materials, and reuse decorations.
- Club operations:
Our club nights are planned to combine enjoyment, atmosphere, and responsibility. We prioritize good access by public transport, seasonal catering, reusable solutions, and the most resource-friendly execution possible. Equipment, materials, and decorations are used and reused multiple times.
- Cultural events:
Our cultural events combine atmosphere, quality, and responsibility. We prioritize good access by public transport, use sustainable catering wherever possible, apply reusable and recycling systems, and design our events to be resource-friendly and inclusive.
- Staff training:
Our staff are trained regularly on sustainability topics so we can continuously improve our processes and handle resources more consciously in everyday work. This includes careful handling of food, avoiding food waste, efficient use of energy and water, and consistent waste separation. We work with external hygiene consultants who provide us with important guidance in this area.
